04/19/2005I am using diet as complimentary to chemo and surgery. Is it true that high fat dressing negates the health benefits of salad? I had a mixed green salad with spinach, corn, broccoli sprouts, cabbage, chickpeas, tomatoes, jicama, mushrooms and croutons. I inadvertantly added too much thousand island dressing and I ate the salad afterwards. Later I was told by my nutritionist that I killed the healthiness of the salad with the dressing. Will my body not absorb the health benefits of the salad because of the dressing?

04/20/2005the salad contents were still very healthy for you. what she is referring to i think is that dressings are usually high in fat. so if you thought you just ate a low fat and low cal meal you didn't. you still got the benefit of vitamins, anti-oxidants and such though.
